Ingredienti per 4 persone
Questo contorno e' davvero semplice da preparare e accompagna perfettamente i secondi di carne.
- 700 g di topinambur
- 450 g di carote tenere
- 40 g di Burro delle Alpi Gran Moravia
- un ciuffo di prezzemolo
- uno spicchio di aglio
- 3 cucchiai di mollica di pane casereccio
- olio extravergine d'oliva q.b.
- sale e pepe nero di mulinello q.b.
Scaldate due cucchiai di olio extravergine d'oliva in un largo tegame, e rosolatevi i topinambur pelate e le carote mondate, tutto ridotto a cubetti non troppo grossi.
Aggiungete il burro delle Alpi Gran Moravia, abbassate la fiamma, incoperchiate e lasciate stufare le verdure finché l'acqua di vegetazione di sara' completamente assorbita (20 minuti circa). Mescolate di tanto in tanto.
Nel frattempo sbriciolate la mollica del pane e friggetela in padella con un velo di olio e lo spicchio di aglio pelato.
Spolverizzate le verdure di prezzemolo tritato, aggiustate di sale e pepe e fate insaporire la preparazione mescolando per qualche minuto a fuoco alto.
Trasferite tutto in un piatto da portata e cospargete con le briciole di pane all'aglio.
Servite immediatamente. Caldo.
Che bel piatto allegro e fantasioso nonchè invitante! Ed io che ancora devo comprare questo benedetto topinambur....ce la farò mai?
